Oh, chocolate. Hands down, I'm a chocoholic. I mean, I don't need a bite of chocolate every day, but every now and then the sweet tooth strikes and I just don't wanna fight it. I rather enjoy a good bite of dark chocolate and feel good about it.
You love chocolate too and still want to enjoy a few squares after dinner, even if you're on a weight loss diet? Hooray, I've got a way for you to make your own healthier chocolate bar and it's not even difficult!
I started making this pistachio chocolate bar during my competition prep for my re-feed days to treat myself. It's the perfect way to control what goes in your mouth, but also enjoy a well deserved treat.
I absolutely love the chocolate bars from Cadbury. But let me show you how easy it is to make your own bar at home - with just 3 ingredient and 5 minutes of your time (which should be faster than going to the nearest grocery store and buying your favourite chocolate bar).
The best is yet to come: You can add whatever toppings you like. You're a peanut butter lover? Put it in. You love dried cherries? Go right ahead. You just want to sprinkle a little bit of sea salt over it. No problem, it's your choice.
Even my husband - who is the biggest Cadbury-fan in the whole U.K. - gave this pistachio bar credit (he ate nearly the whole bar, left me just one piece - how thoughtful is that?). You have to give it a try.
But enough of the bla-bla, let's get to the recipe!
- 100g vegan dark chocolate chips
- around 30g of roasted and salted pistachios
- 1/2 tsp coconut oil
Line a baking sheet on a baking tray. Put your chocolate chips into a microwave-safe bowl. Add the coconut oil and heat for 60 sec, or until the chocolate melts. You want it to be smooth and pourable.
Pour the melted chocolate onto the baking sheet, spread it so it's about 5mm thick. Now comes the fun part: Sprinkle with the pistachios or whatever topping you like!
Place the baking sheet in the fridge for 1 hour. Break it up in pieces and enjoy!
