I love, love, love peanut butter. That's why I'm absolutely in love with these peanut butter oatmeal bars (with a hidden chocolate center).
You have a stressful week ahead? Then these bars are the perfect midday pick-me-up, believe me. They are an absolute must-have in your lunch box (hell yeah, they are perfect for meal prepping!). I made them the other day and they were instantly gone. I just had one tiny bite, my husband ate the rest (he loves the combination of peanut butter and chocolate).
All you need for these gluten-free no bake bars are 4 simple ingredients and no fancy kitchen tools. They couldn't be any easier to make.

- 270g oats
- 175g dark chocolate chips
- 170g honey
- 250g smooth peanut butter (or any other nut butter)

In a medium sized bowl, mix together the peanut butter, honey and oats, using a hand held mixer. Blend everything until it's fully combined and the dough is clumping together in one ball.
Divide the texture in half. Press 1/2 of the dough firmly onto the bottom of a baking pan (line it with baking paper before, so it's easier to pull out the bars). Now melt the chocolate chips in a microwave-safe bowl, using the microwave and spread the melted chocolate over the top of the dough, as a smooth layer. Once the chocolate is spread across the top, refrigerate for about 20 minutes.
Get the pan out of the fridge and press the remaining 1/2 of the dough over the chocolate layer. Place the pan back in the fridge for another 5-10 minutes before cutting into bars. Enjoy!
