My new favourite snack: Peanut butter banana smudgies

For several weeks, I've been craving ice cream sandwiches like crazy. Unfortunately, the only ice cream sandwiches here in the UK are the overpriced ones from Ben & Jerry's (don't get me wrong, they taste great, but they are just too pricey).

Especially in the late afternoon, I've been looking for a little pick-me-up, which isn't too calorie heavy. And I found the perfect ice cream sandwich substitute, which is also calorie friendly: Peanut butter banana smudgies. And - oh my god - if you haven't tried them yet, you definitely have to!

Enough of the bla bla, here's the recipe:

Ingredients

(for approx. 8 smudgies)

  • 2 overripe bananas
  • 2 tbsp smooth peanut butter (or any nut butter you like)
  • 16 graham crackers or similar

Macros per smudgy

  • Calories: 160 kcal
  • Protein: 3g
  • Carbs: 29g
  • Fat: 5g

Instructions

Smash the bananas and put them into a mixing bow. Mix in the peanut butter. Lay a baking sheet on a flat surface or baking tray. Put the peanut-banana mixture onto 8 crackers, which are then placed on the baking tray.

Put another cracker on top of the mixture to form a sandwich. Finally put it in the freezer for at least 3 hours or better overnight. Enjoy whenever you need a treat. Make sure to let them sit for a few minutes, if you had them in the freezer for a long time.
