The absolutely best vegan homemade ice cream in the world

Summer is slowly coming and everybody loves to enjoy a healthy and delicious bowl of homemade ice cream. I personally could eat ice cream at any time of the day or year. Especially with this delicious and super simple recipe.

Trust me, this is the kind of ice cream, you want to hide, put a locker on, eat after the kids are in bed or when your partner is away. You don't want to share it. ;)

By the way, you don't need a fancy ice cream maker for this recipe. All you need is a blender.

The recipe for the base:

All you need are 2 ingredients. Whaaat? Yes, 2! Isn't that perfect? Can you believe you can make your own homemade ice cream with just 2 ingredients and no expensive ice cream machine? Let me tell you how:

  • 350g silken tofu
  • 25g vegan protein powder; any taste you like, but I prefer vanilla (or any protein powder you like, it doesn't have to be vegan, if you don't care)

It couldn't be easier! Simply put both ingredients in a food processor and blend until smooth. Now you got the base. But it's not an ice cream yet. Depending on which flavour you want, you just have to add frozen fruits and blend it again.

Freshly made tofu ice cream tastes much better when you enjoy it immediately.

Here are my favourite variations:

Mango ice cream

Simply add 250g of frozen mango chunks to your blended ice cream base and blend again. I love to add some cinnamon, but you don't have to.

Peanut butter ice cream

After straining the base mixture, add 100g smooth peanut butter (I used a reduced fat one) and blend again until it's fully incorporated. You can also use crunchy peanut butter, if you want some peanut chunks in your ice cream!

Strain the mixture into a large bowl and freeze until it has the consistency you like.

Optional, you can add some chocolate sauce here. I often use the zero-syrups by MyProtein.

  • Carbs: 50g
  • Fat: 44g
  • Protein: 61g
Chocolate ice cream

Add 4 tbsp unsweetened cocoa powder and 1g of stevia to the mixture and blend again. For this recipe I would recommend using a chocolate protein powder instead of vanilla. When everything's well blended, put the mixture into a freezer safe container and freeze until it reached your desired consistency.

Kiwi fruit ice cream

My absolute favourite at the moment. Just add 250g frozen sliced kiwi fruits to the base mixture and blend again. I recommend adding a little bit of honey, as kiwi fruit can be quite sour.

Pineapple coconut ice cream

Perfect for a hot summer day, trust me! You feel like you're on a holiday vacation with this variation. Want to try it? Just add 200g frozen pineapple chunks to your mixture and 50g frozen diced coconut and blend. Put the mixture in a bowl and top the ice cream with some grated coconut. Enjoy!

Raspberry ice cream

Add 250g frozen raspberries to the mixture and a little bit of honey to sweeten it. Blend, blend, blend and enjoy! If you want, you can top it with sliced almonds or some honey puffs. Mmmhh, so good!
